Job Description

The Remote Baker position produces a wide variety of bakery goods, assists with the preparation, production, and presentation of foods, completes production sheets, and trains food service personnel. All duties are performed in accordance with NMS' mission, vision, values, and departmental policies.

Responsibilities
  • Perform main line food production duties as assigned.
  • Prepare and produce bakery items in a remote camp setting, including mixing, baking, and frying.
  • Coordinate with supervisors on daily needs, complete production sheets, review maintenance reports, and verify supply needs.
  • Assist with menu and recipe development.
  • Monitor and replenish kitchen items using proper rotation.
  • Cook various foods for meals and prepare salads, trays, and bakery items.
  • Use production sheets to determine quantities needed.
  • Utilize various food prep procedures and equipment, including cutting instruments.
  • Assist colleagues in food production and handling special duties.
  • Serve in the service line as needed.
  • Handle special food prep or cleaning projects.
  • Ensure proper rotation of food items.
  • Maintain cleanliness and sanitation of preparation and service areas.
  • Oversee food serving lines and areas to ensure proper setup and cleanliness.
  • Manage garbage removal, setup, and breakdown of tables and service areas.
  • Communicate with supervisors regarding meal needs and backups.
  • Complete menu display announcements.
  • Organize freight regularly.
  • Supervise staff directly or through lead personnel.
  • Control quality and quantity in food production and sanitation.
  • Train and supervise food service personnel.
  • Observe and instruct proper rotation for produce and dairy.
  • Maintain equipment and storage areas following sanitation and safety standards.
  • Report safety or sanitation issues to supervisors.
  • Perform other duties pertinent to the department's success.
Qualifications
  • Minimum three years of related baking experience, demonstrating knowledge of high-volume food and bakery production, and supervisory skills.
  • Ability to instruct and train others, multitask effectively.
  • Obtain Alaska Food Workers Card and/or ServSafe Certification upon hire.
  • Pass pre-employment requirements including background check and drug test.
  • Ability to work as part of a team and make decisions independently.
  • Stand for 12 hours per shift.
  • Live in dormitory-style accommodations and meet cleanliness standards.
  • Speak, read, write, and understand English.

Preferred:

  • Associate's Degree in Culinary Arts or formal certification from a recognized national association; or two additional years of experience if lacking vocational training.
  • At least two years of supervisory experience in a restaurant or industrial kitchen.
Working Conditions and Physical Requirements

Indoor/outdoor environment, frequently exposed to arctic conditions.

Moderate to loud noise levels.

Industrial kitchen setting in a remote camp.

Must stand, walk, climb, push, pull, use hands, stoop, kneel, and crouch constantly.

Travel by plane or bus to remote camps.

Lift and move up to 50 lbs.
