Description Bluebird London NYC encompasses an all-day caf and wine bar, cocktail lounge, and international brasserie all overlooking Central Park.

The restaurant, envisioned by restaurant group D&D London, is an expansion of the beloved Chelsea namesake, helmed by Executive Chef Brian Yurko. The name derives itself from the record-breaking race car driven by famed motorist Sir Malcolm Campbell, which set the land-speed record in 1925, especially fitting given the original UK location is located within an Art Deco garage.

Bluebird is a Chelsea landmark of 20 years an iconic restaurant in the heart of the Kings Road and at the forefront of Londons restaurant and social scene.

D&D London is looking for an F&B professional to take the position of Pastry- Sous Chef for Bluebird London Restaurant due to open in September 2018 in NYC. Bluebird London restaurant will be located inside Time Warner Center at Columbus Circle.

JOB OVERVIEW:

We are looking for an experienced Pastry Sous Chef to prepare a variety of desserts, pastries or other sweet goods. The ideal candidate will be well-versed in culinary arts with a passion for sweet and delicious creations. They must adhere to health and safety standards to provide clients with the best possible serving. The goal is to enhance customer satisfaction so that we can maintain and expand our clientele

REPORTS TO: Executive Chef

Education or Certification

High School Diploma or equivalent required

Culinary School and / or Hospitality Management Degree preferred (AOS or Bachelors Degree)

Certifications as required to comply with local, state and health codes, i.e., food safety and alcohol awareness

Minimum four years combined experience in an Upscale casual restaurant along with Fine Dining Restaurants for a broad and rounded experience base.

Skills and Knowledge

Create new and exciting desserts to renew our menus and engage the interest of customers

Decorate pastries using different icings, toppings etc. to ensure the presentation will be beautiful and exciting

Monitor stocks for baking ingredients such as flour, sugar etc. and make appropriate orders within budget

Check quality of material and condition of equipment and devices used for cooking

Guide and motivate pastry assistants and bakers to work more efficiently

Identify staffing needs and help recruit and train personnel

Maintain a lean and orderly cooking station and adhere to health and safety standards

Strong ability to review and understand the competition, food trends and customer expectation.

Strong employee relation skills.

Strong knowledge of food & labor control procedures.

Effective influence, decision & problem-solving skills.

Strong organization and communication skills (verbal, listening, writing).

Ability to work well in stressful and high-pressure situations.

Under the direction of Executive Chef, execute the established Food & Beverage operations strategy to drive results.

Ability to interact with standard software applications including point of sale and food cost systems.

Ability to structure and execute monthly inventory.

Under the direction of Executive Chef, ability to manage progressive disciplinary actions (PDA) with employees as well as handle termination processes.

Knowledge of purchasing, inventory controls, supplies, and equipment.

Knowledge of governmental regulations and safety standards (OSHA, EPA, ADA, CFC, HFPA).
