About Scratch Restaurants
Scratch Restaurants was founded by Chefs Phillip Frankland Lee and Margarita Kallas-Lee, who aimed to create innovative restaurant concepts rooted in an artisanal from scratch approach to hospitality. Our current focus includes expanding our Sushi|Bar and Pasta|Bar tasting menu concepts.
Position Summary
The General Manager oversees all aspects of dining and service operations, including managing the service and chef teams, daily planning, fiscal responsibilities, beverage program, labor scheduling, procurement, hygiene, sanitation, and staff development. The role supports the Chef de Cuisine and manages the Beverage Program, requiring strong leadership, quick decision-making, and a dedicated work ethic. Responsibilities include managing costs, guest experience quality, staff retention, and scheduling. Availability for work during restaurant hours and events is essential, along with on-site presence and communication via email or phone for pressing issues.
Essential Duties and Responsibilities
- Provide outstanding guest service in a warm and inviting environment
- Manage the Beverage Program, including wine, sake, whiskey, and cocktails
- Communicate effectively with the culinary team regarding menus and service protocols
- Conduct performance reviews and disciplinary actions as needed
- Coordinate onboarding with Human Resources
- Prepare and manage shift schedules bi-weekly
- Address guest issues promptly and courteously
- Respond to inquiries via email and voicemail in a timely manner
- Monitor reservations and guest bookings
- Ensure restaurant maintenance, safety, and hygiene compliance
- Manage payroll hours, including clock-in/out, breaks, overtime, and sick leave
- Oversee ordering, purchasing, and inventory control
- Utilize Requisition forms and daily sales reporting tools
- Monitor and aim to meet sales, labor, and beverage cost targets
Minimum Requirements
- Maintain professionalism both inside and outside of work, including social media
- Ability to multitask and prioritize effectively
- Excellent communication skills and hygiene standards
- Guest and team-focused attitude
- Availability during restaurant hours, including evenings, holidays, and weekends
- ServSafe certification required
- Strong collaboration skills with culinary and management teams
- Effective time management and organizational skills
- Proficiency in Outlook, Microsoft Office, and Mac OS; familiarity with Tock and Toast preferred
- High school diploma or equivalent with basic mathematical skills
