Key Responsibilities

As a Food Production Manager for dnata Catering, you will oversee the efficient and high-quality production of food items for airline passengers. Your main role will be to manage and lead a team of production staff, including chefs, cooks, and kitchen assistants, in executing food preparation, cooking, and packaging processes. You will work closely with the Executive Chef and culinary team to ensure all meals are prepared according to established recipes, portion sizes, and presentation standards. Additionally, you will monitor and maintain the highest levels of food safety and hygiene, strictly following industry regulations and guidelines. Your expertise in production planning, inventory management, and kitchen operations will be essential in optimizing workflow, reducing waste, and maximizing productivity. You will collaborate with suppliers to ensure the timely delivery of ingredients and materials. Your strong organizational and problem-solving skills will be crucial in addressing operational challenges and ensuring smooth operations. By maintaining quality control and efficiency, you will contribute significantly to dnata Catering's success and reputation.

You WillEssential Functions and Responsibilities:
  • Make unsolicited recommendations for improving all areas of production as part of our continuous improvement program.
  • Perform other duties as assigned.
  • Supervisory/Management Responsibilities:
  • Schedule and assign work for department staff; follow up on results.
  • Supervise employees in daily activities including training, motivating, and disciplining employees.
  • Enforce systems, policies, and procedures.
  • Follow established rules for entry to building and work areas, proper attire, and compliance with HACCP/GMP guidelines for hygiene and security.
  • Read instructional charts or diagrams for food and supplies preparation.
  • Comply with all HACCP/GMP and sanitation policies.
  • Portion and garnish hot foods into serving dishes, inspecting for contamination.
  • Properly store or dispose of unused food items, adhering to dating and rotation schedules.
  • Handle cold food items, preparing them for tray assembly.
  • Store completed trays for transport to aircraft.
  • Note: Employee is regularly exposed to extreme cold (35-40°F).
Nonessential functions:
  • Other duties as assigned.
Compensation

The salary range is $67K - $105K annually, excluding incentives. Final pay depends on factors like location, experience, and qualifications.

Qualifications
  • Food Service experience required.
  • 2-5 years supervising a food production environment.
  • Knowledge of policies, HACCP, USDA, GMP, sanitation, and cold food production processes.
  • Effective communication skills; computer skills and inventory knowledge are a plus.
  • Understanding of quality systems and production techniques.
Additional Demands

Requires multitasking under time constraints, attention to detail, punctuality, following instructions, and safety awareness. Physically, must stand, walk, reach, and lift up to 30 pounds. Work environment is indoors with variable noise levels and exposure to cold temperatures.
