We refine the classics, develop the unknown and grow constantly - sometimes beyond our own expectations.Job DescriptionYou are the secret behind-the-scenes mastermind of the Pastry kitchen. As Executive Pastry Chef, you are a natural motivator, capable of managing and inspiring the kitchen staff in your partie. Your focus is to create an effective cooking process, provide input to the Pastry Chefs for recipes and menus which are developed based on market trends and budget boundaries - all while maintaining a healthy profit margin while using the best possible ingredients.You are responsible for overseeing a team producing everything from baking traditional confectionary to assist in managing the daily preparation and production of all pastry food according to airline specification and DO & CO standards as well as the overall running of the kitchen, cleanliness and organization.A day as an Executive Pastry Chef:
  • Monitor wastage and complete assigned tasks within the given time in order to meet strict deadlines.
  • Demonstrate creative baking techniques such as prepping, melting, measuring, tempering, baking, whipping, icing, layering, juicing and decorating.
  • Review menu specifications and ensure all pastry team members are following the guidelines.
  • Maintain food cost levels through purchasing and wastage control.
  • Motivate, train and develop team members' skills
  • Comply with all food safety and hygiene regulations as stated in the food safety management system handbook.
  • Report problems with the food safety management system to their manager and the hygiene and food safety team
Qualifications
  • Minimum of 3 years of experience in Pastry/Bakery preferably with large production volume managing a team.
  • Full Knowledge of baking ingredients, measuring techniques, mixing methods, kitchen equipment, and baking times.
  • Certificate in culinary arts, pastry-making, baking or relevant field
