Position Summary

The Director of Bakery Manufacturing will oversee Busch's bakery production, ensuring cost-effectiveness, quality standards, safety, and efficient management of operations, staff, and resources.

Key Responsibilities
  • Manage all aspects of bakery production, including food safety standards.
  • Create and improve Standard Operating Procedures (SOPs).
  • Maintain product quality, equipment, and operator performance standards, optimizing cost and efficiency.
  • Assess and adjust strategies, systems, procedures, and resources to enhance production, quality, safety, and profitability, ensuring compliance with regulations.
  • Record all waste to maintain accurate shrink data.
  • Ensure products meet specifications for quality, yields, packaging, and merchandising.
  • Oversee production scheduling to ensure timely and accurate order fulfillment.
  • Manage ingredient, raw material, and supply orders to meet demand while controlling inventory.
  • Collaborate with deli management and store managers to ensure communication and coordination.
  • Research and develop new products and seasonal recipes to boost sales.
  • Document, communicate, and train staff on procedural updates.
  • Hire, train, and develop central kitchen staff.
  • Ensure compliance with sanitation, food safety, and safety standards, adhering to regulatory requirements.
  • Provide leadership and guidance to team members.
  • Maintain professional knowledge through education, publications, benchmarking, and networking.
  • Anticipate and resolve operational issues proactively to improve guest experience.
  • Follow company policies and procedures consistently.
  • Promote passion for products and services among staff and guests.
Qualifications
  • Bachelor's degree in management, food systems, or related field; culinary degree preferred.
  • Minimum 5 years management experience in food manufacturing.
  • PCQI certification and knowledge of FDA FSMA requirements.
  • Experience with large-volume baking equipment and efficiency drivers.
  • Proficiency in culinary and baking techniques for recipe creation and quality assessment.
  • Strong leadership, organizational, planning, analytical, problem-solving, and decision-making skills.
  • Excellent communication and interpersonal skills.
  • Computer proficiency in Excel, Word, and email; adaptable to proprietary systems.
