The Dining Services Operations Specialist will be deployed to support culinary operations of Grace Management, Inc. communities by serving as an Interim Dining Services Director or serving as a Dining Services subject matter expert to support special projects and community needs. The Dining Services Operations Specialist will report directly to the National Director of Dining Services and will be responsible for performing duties as outlined prior to arriving to the assignment within parameters of established policies and procedures and in keeping with the philosophy and mission of the organization. The Dining Services Operations Specialist must collaborate and support the Regional Director of Operations and the community Executive Director when serving a community assignment. Maintain compliance with federal, state, and local regulations.In conjunction with the National Director of Dining Services, it is the responsibility of the Dining Services Operations Specialist to help support the ongoing training and orientation of new Grace Management, Inc. Dining Services Directors. This position supports all aspects of Dining Services and supervises dietary associates. Ensures all Dining Services associates meet all regulatory requirements, maintains quality food service within budget, and assists with any special projects as assigned by the National Director of Dining Services.Essential Functions of the Dining Services Operations SpecialistAs the Dining Services Operations Specialist, this individual must be able to travel up to 90% - 95% of time. In addition, the Dining Services Operations Specialist must plan and coordinate travel schedules and manage and maintain PCard/expense management compliance. When serving as an Interim Director of Dining Services, the Dining Services Operations Specialist will:Provide oversight of the Dining Services department in the absence of a community Dining Services Director.Responsible for the Dining Services department in all its aspects.Plan menus via Grove Menu system.Purchase foods and supplies; Inventories and supervises storage of incoming food and supplies; Ensures food inventory is well managed and utilized effectively to manage food cost.Prints production sheets; Prepares and pulls recipes for utilization by cook team.\Prepares meals according to planned menus, including any special diet requirements, Follows recipes and special diet orders.Educates and assists with preparation of meals according to planned menus, including any special dietary requirements.Educates and assists with understanding of processes and systems including but not limited to all applications on the DSSI and Grove Menu platforms.Maintains safe and sanitary dietary department.Directs and instructs Dining Services department associates.When visiting a community, will ensure all safety and dining department standards are being followed based upon current Grace Management, Inc. Safety and Sanitation policies.Follows all Grace Management, Inc. GPS Dining Service standards and provides coaching and training based upon the GPS Dining Services standards.Knowledge of food service regulations, state, and federal regulatory requirements, and proper food handling procedure.Serves food according to portion control.Schedules all Dining Services department associates based upon job duties, as required.Check food and supplies for next meals.Participates in special events planning and preparation.Maintains equipment, including dishes, cookware, utensils, supplies, and reorders items when needed.Must exhibit excellent customer service including patience and a friendly demeanor.Must be proficient with Word/Office/Excel and current Grace Management, Inc. applications.Exceptional organization and time management.Effective written and verbal skills and good active listening skills.Performs other related duties as assigned by National Director of Dining Services.Non-Essential Functions of the Dining Services Operations SpecialistSupports and participates in the resident centered activity programs as appropriate when serving a community.Participates in projects or committees as assigned.Attends all associate meetings including in-service education and associate functions, as requested by the National Director of Dining Services.Assists in variety of tasks involving residents and associates as assigned.Knowledge, Skills, Abilities, and ExperienceHigh school Diploma or GED at minimum with some specialized training in food service.Ability to read, write, and speak English.Continued education in food service preferred including RD, CDM, or Culinary Degree.Serv-Safe Certification Class.Two years minimum experience in food service management preferably in a health care setting.Be free from communicable disease.Completion of drug testing and criminal background check upon hire and upon request of supervisor.Must be able to cook and follow standard recipes.Physical requirements include bending, standing, lifting, stooping, sitting, stretching, carrying, and walking and the ability to lift up to 40 pounds.Must have manual dexterity to peel, cut, and prepare different types of food; Ability to work with a variety of kitchen machinery.Ability to accept constructive input as to the quality of your meals/cooking.Ability to relate to residents and associates in a courteous and diplomatic manner under all circumstances. Ability to get along with others and have excellent people skills.Familiarity with restaurant or cafeteria-style organization regarding food preparation and service, purchasing, associate scheduling, food, and labor cost control, as well as quality control.Experience in record keeping and menu planning.Adhere to and carry out all policies and procedures.Ability to follow directions and exhibit Grace Culture while representing the company in the field.Why Grace Management?
