Job SummaryPrepares food in accordance with current applicable standards, guidelines and regulations and in accordance withestablished policies and procedures to ensure that quality food service is provided at all times in a safe, efficient andtimely manner. Keeps work areas in a neat, clean and orderly condition. Interacts with residents in a variety of ways andsettings, including social, recreational, diversional and/or vocational ways.ResponsibilitiesFood Preparation for Regular Meal ServicePrepares food following standardized recipes and established menu cycles. Tastes and critically evaluates quality and palatability of all food items and corrects as necessaryaccording to recipe and department standards. Consistently follows proper food preparation methods according to professional and HealthDepartment standards. Presents and garnishes foods in a clean, attractive manner. Follows production sheets and monitors resident meal count and forecasted dining room meals toprevent underproduction or overproduction of food. Coordinates with wait staff to ensure proper food temperature, presentation and portion size for thecustomer. Checks the production sheet for menu items needed. Properly stores leftovers. Suggests menu or recipe changes to utilize leftovers and minimize waste.Food Preparation for Catered Events/Special Events/BuffetsEffectively uses catered events slips, catering menus, catering guidelines and standardized recipes tocoordinate ordering and requisitioning of food. Pulls approved amount of food and supplies for production. Prepares food in sufficient amounts (does not over or under produce), according to catering slips andrecipes. Always prepares food in time to meet catering schedule but not too far ahead so quality diminishes. Always communicates and coordinates with other food services staff, to ensure all catering needs aremet. Tastes and critically evaluates quality of all food items and corrects as necessary according to recipeand department standards.Sanitation and Cleaning ResponsibilitiesConsistently practices safety and sanitation precautions by monitoring and recording temperature offood, refrigerator and freezer, and ovens and by sanitizing all cooking areas in the kitchen on a routine basis. Exhibits knowledge of Mon County Health Department proper food handling methods and sanitationprocedures. Maintains sanitary and organized cooking area. Consistently takes all required sanitation precautions such as routinely washing hands, etc. Always follows professional standards with regard to personal hygiene and protective attire (gloves,hair covering, apron, uniform, shoes, socks and stocking). Completes regular cleaning duties in kitchen, pantry and storage areas as assigned and completeswithin deadlines established. Operates, maintains and cleans food preparation equipment, per supervisor instruction.Performs Other Duties as RequiredAttends mandatory in-services, staff meetings, and actively participates in self-education withinestablished timeframes. Identifies appropriate cases of abuse and neglect and demonstrates knowledge of mandatoryreporting requirements. Attends a minimum of 4 staff meetings per year. Maintains required job knowledge. Performs Other Duties as Required.Knowledge, Skills & AbilitiesHeavy Work: Frequent lifting and/or carrying of objects weighing up to 50 lbs with a maximum lifting of 100 lbs.Knowledge of commercial kitchen practices and procedures and/or oneyear prior cook experience preferred. Must be able to read, write, speak and understand english. Ability to understand VHPand department policies and procedures and operate departmental equipment ability obtained through on- the-job training.Effective interpersonal communication skills in order to maintain cooperative work relationships.
