The esteemed il Buco al Mare is seeking a Bakery Assistant for its new Commissary, il Buco Bakery, located on Plank Road, East Hampton, NY.The il Buco Bakery is a unique establishment that takes pride in its naturally leavened products and emphasizes organic and locally sourced ingredients, seeks passionate pastry assistants like you to join our innovative team!

The bakery assistant provide support to the Head Baker in the Bakery department while working with other baking assistants. They are responsible for assistance in sourdough bread preparation, maintaining a clean work area, and keeping a consistent schedule of availability.

If you have a basic understanding of sourdough rustic breads, fermentation, and laminated doughs (breads of all types, croissants, rye, etc.) and are looking to gain practical skills and grow your knowledge of bread while making meaningful contributions to the Bakery program this is an excellent opportunity for you.

Responsibilities include:

  • Weighing, Mixing and Shaping of sourdough breads
  • Setting up and breaking down the Bakery Department each shift.
  • Storing food safely.
  • Cleaning and maintaining the Bakery area according to food safety standards.

The Ideal Bakery Assistant :

  • Has passion for baking, pastries, baking ideology, and direction
  • Meticulous attention to detail and a sense of urgency: Scaling, mixing, portioning, shaping, and baking a variety of doughs; Knowledge and understanding of fermentation
  • Recognize the importance of professionalism and respect and exemplify this in interactions with the Head Baker and co-workers
  • Strong communication skills and professional working proficiency in English are a plus.

Required Skills

  • Knowledge of Rustic Breads and Fermentation
  • Understanding of NYC DOH
  • Early morning flexibility. Note: Assistants must work weekends and holidays. They must start work early to prepare baked goods for morning trade
  • Clear Communication and Organization Skills
  • Ability to Work Independently and Multitask
  • Physical Ability to Lift 50 Pounds
  • Equipment familiarity and operation: mixers, ovens, dough sheeters, proofing equipment, etc.
  • Over One to two year of Baking Experience
