About Laurel Bakery:

Laurel Bakery is a bakery from Redwood Hospitality, the team behind the Michelin-starred Oxalis and the acclaimed Place des Fêtes. Located on the Columbia Street Waterfront in Brooklyn, we specialize in viennoiserie, artisanal breads, and exceptional coffee, all served from a warm, design-forward retail space attached to our production kitchen. As we expand into café service and wholesale, we're building a team rooted in skill, collaboration, and care.

About the RoleWe're looking for a passionate Baker to focus on laminated doughs and viennoiserie shaping, with additional support across our bread program. This is a production role where attention to detail, consistency, and a love of learning are key. You'll be an integral part of our early team and have the opportunity to grow with us.Key Responsibilities

  • Laminate, shape, and bake viennoiserie with precision
  • Assist in mixing, shaping, and baking artisan breads
  • Maintain high production standards and quality control
  • Keep a clean, organized, and efficient work environment
  • Work closely and communicate clearly with the team
  • Follow all NYC DOH food safety and sanitation guidelines

Ideal Candidate

  • 2–4 years experience in pastry or artisan bread baking
  • Strong technical foundation in French pastry and lamination
  • Familiarity with naturally leavened bread production
  • Able to work independently and as part of a small team
  • Eager to grow, take feedback, and contribute ideas
  • Can lift 50+ lbs and stand for extended periods (up to 9 hours)
  • Early morning availability required
