Essential Functions. Assembles and prepares ingredients for cooking by cleaning and cutting. Follows standardized recipes, calculation ingredients based on weight and volume. Records temperatures correctly on temperature log sheets. Responsible to replace food items that do not fit standards. Stores food items as required, labeling and dating items per standards.
