Sky Cafe Ltd., a premier airline catering provider, is seeking an experienced Food & Beverage Director to lead and oversee all aspects of food production, quality assurance, and service execution across our airline catering operations. This role is responsible for ensuring exceptional food quality, operational efficiency, and compliance with airline and regulatory standards while driving innovation and cost-effective solutions.
Key ResponsibilitiesOperational Leadership & Strategy-Develop and implement strategic food and beverage plans to enhance quality, efficiency, and profitability.-Oversee daily kitchen and catering operations to ensure smooth execution and on-time performance for airline clients.-Collaborate with airline partners to tailor menus that meet culinary standards, passenger preferences, and cost constraints.-Ensure all Service Level Agreements (SLAs) related to food quality, safety, and delivery are consistently met.
Food Quality & Compliance-Maintain strict adherence to HACCP, airline regulatory requirements, and health & safety standards.-Conduct regular food safety audits, supplier assessments, and quality control checks to minimize risk.-Develop and enforce standard operating procedures (SOPs) for food handling, preparation, and storage.-Implement risk management strategies to mitigate incidents related to food safety, including responses to food-borne illness concerns.
Financial & Cost Management-Develop and manage food and beverage budgets, ensuring cost-effective menu -development and supply chain efficiency.-Optimize procurement strategies to reduce costs while maintaining ingredient quality and consistency.-Track key performance indicators (KPIs) such as cost per meal, waste reduction, and vendor performance.-Collaborate with procurement teams to negotiate supplier contracts and volume-based pricing structures.
Team Leadership & Development-Lead and develop a high-performing culinary and operations team, including chefs, kitchen staff, and logistics personnel.-Foster a culture of continuous improvement, training, and innovation in food preparation and service.-Oversee staff scheduling, labor cost optimization, and performance management.
Client & Stakeholder Management-Serve as the primary point of contact for airline catering partners, ensuring high service levels and customer satisfaction.-Work closely with airline clients to understand menu preferences, special dietary requirements, and service improvements.-Coordinate with internal departments (logistics, procurement, operations, and finance) to optimize catering performance.
Qualifications & Experience-Bachelor's degree in Hospitality Management, Culinary Arts, Business Administration, or related field.-10+ years of experience in food & beverage management, preferably in airline catering, large-scale food production, or hospitality.-Strong knowledge of airline catering regulations, HACCP, and food safety compliance.-Proven experience in menu development, cost control, and supplier negotiations.-Strong leadership skills with experience managing cross-functional teams in a high-paced environment.-Excellent communication and client relationship management skills.-Ability to analyze financial reports, optimize budgets, and drive operational efficiencies.-Experience working with inventory management systems and catering logistics software is a plus.
