FSA's Mission is to maintain and enhance the quality, diversity, cost, and value of food in the campus dining programs, improving fiscally prudent and affordable food plans for students While ensuring the availability of desired and appropriate merchandise, products, and services for the campus community; Fostering and supporting the campus' core mission of academics, research, scholarship and intellectual creativity, inclusivity, and sustainability Position Summary: The Secondary Cook at Stony Brook Hospital is responsible for the preparation of quality food for patients, staff, and visitors using standardized recipes and production sheets. This employee ensures efficient, safe, and sanitary food production. Required Qualifications:
    • Associated Degree in Culinary Arts or similar, or equivalent of education and experience.
    • Serve-Safe or Food Manager Certificate (current or obtained within 6 months of hire)
    • Minimum of 3 years in a high-volume health care environment.
    • Knowledge of modified diet principles.
    • Must be able to read, write, and speak English, follow written and verbal instructions, and complete simple computational skills
    • Ability to meet acceptable background check standards
    • Ability to work flexible hours, including evenings and weekends, as appropriate.
Preferred Qualifications:
    • Experience in a healthcare environment
Program/Department Responsibilities:
    • Prepare patient menu items in accordance with forecasted and/or tallied quantities, following established recipes and plating protocols.
    • Demonstrate knowledge of food preparation for modified diets based upon restrictions relating to age, nutrient, and texture modifications.
    • Complete food temperature control logs as per established protocol.
    • Operate and clean equipment per departmental procedures.
    • Demonstrate knowledge of sanitation and food safety
    • Utilize equipment to perform job functions
