Job Description

The Remote Baker position involves producing a variety of bakery goods, assisting with food preparation, production, presentation, completing production sheets, training food service personnel, and other related activities. All duties are performed in accordance with NMS' mission, vision, values, and departmental policies.

Responsibilities
  • Perform main line food production duties as assigned per shift.
  • Prepare and produce bakery products in a remote camp setting, including mixing, baking, and frying.
  • Coordinate with supervisors to review daily needs, complete production sheets, review maintenance reports, and verify supplies.
  • Assist in menu and recipe development.
  • Monitor and replenish kitchen items using proper rotation.
  • Cook various foods such as breakfast, lunch, dinner, snacks, salads, and more.
  • Prepare, present, and restock items like vegetables, salads, meats, cheeses, and bakery goods.
  • Use production sheets to determine quantities needed for serving areas.
  • Utilize various food preparation procedures and equipment, including cutting instruments and salad production.
  • Assist colleagues in food production and handling special duties.
  • Serve in the service line as needed.
  • Handle special projects related to food prep or cleaning.
  • Rotate food items appropriately.
  • Maintain cleanliness and sanitation of preparation and service areas.
  • Ensure serving lines and areas are stocked, set up, and clean.
  • Manage garbage removal, setup/breakdown of tables and serving areas.
  • Communicate with supervisors regarding meal needs and backup plans.
  • Complete menu display announcements as instructed.
  • Organize freight regularly.
  • Supervise staff directly or through lead personnel, ensuring quality and sanitation standards.
  • Train and oversee food service personnel.
  • Observe and instruct proper rotation for produce and dairy.
  • Maintain equipment and storage areas following sanitation and safety protocols.
  • Report any safety or sanitation issues to supervisors.
  • Perform other relevant duties to support department success.
Qualifications
  • Minimum three (3) years of baking experience with knowledge of high-volume food and bakery production, including supervisory techniques.
  • Ability to instruct, train, and multitask effectively.
  • Obtain an Alaska Food Workers Card and/or ServSafe Certification upon hire.
  • Pass pre-employment requirements such as background checks and drug tests.
  • Ability to work as part of a team and make quick decisions with minimal supervision.
  • Stand for 12 hours per shift.
  • Live in dormitory-style accommodations and meet cleanliness standards.
  • Fluent in English (reading, writing, speaking).
  • Adhere to all safety guidelines and regulations.

Preferred qualifications include an Associate's Degree in Culinary Arts or equivalent certification, and at least two (2) years in a supervisory role in a restaurant or industrial kitchen.

Working Conditions and Physical Requirements

Work environment includes indoor and outdoor settings, frequently exposed to arctic conditions. Noise levels are moderate to loud. Must be able to stand, walk, climb, push, pull, use hands, stoop, kneel, and crouch. Travel by plane or bus to remote camps is required. Must lift/move up to 50 lbs.
